a gastro-orgasmic breakfast: shim’s the crowd pleaser

here’s an entry from my forthcoming cookbook. i have titled this one the crowd pleaser because, well, it is.

this here, real simple and easy breakfast embodies everything i try to achieve as a chef: seek out the best ingredients and then, DON’T FUCK THEM UP. simple, yes?

basically, this is an eggs, ham and cheese on bread thing, but hold on! i am talking about the decadent, quivering, pleasure-seeking sensualist take. yerp.

you will need:

  • the bread: ciabatta buns, halved, toasted and buttered lightly. do first keep warm.
  • the cheese: lincet’s le delice de bourgogne. let warm to room temp. (1/2 hour, so plan ahead.)
  • the ham: crazy thin slices of tanara’s prosciutto di parma. at least 2-3 slices per serving. also, bring to room temp.
  • the eggs: fresh. the best you can find. cook over easy as the final step. yolks must run.

hey, beautiful people of the intersnets: do you know the gastro-orgasmic wonders of the french triple cream brie? well now you do. seek and employ every last taste bud on this puppy: lincet delice de bourgogne. a seriously rich, slightly grassy/mushroomy cow’s milk triple cream from yous guessed it, the bourgogne region of france. it tastes just like it looks.


after you have toasted and buttered your ciabatta, spread a grand smear of le delice, apply that prosciutto and top with the eggs.

if a next leveler, pair with a mimosa; then all will bow before your greatness.

the crowd pleaser.
