shut yer piehole and start the day off right!

it’s texas, in winter, and some bitchez be screaming about the snow. even though we got, what, 2 inches max? unreal. okay, so there was ice, and my neighbor (who has obviously never experienced ice in all its glory before) was spinning his tires like a mofo in an attempt to dislodge his giant truck from his chosen parking spot this morning (memo: flooring it does not work), but still.

dear texas: you snow like a 3 years-old baby GIRL!!

anyway, once you get past all the ooh and the ahh of the snowy wonderland and shit starts melting, it’s still a day like any other. and brutha, you gots to EAT.

may i suggest this kinder, gentler (yet still manly) breakfast of champeens?

i call it the shim deluxe steak ‘n’ eggs with rosemary potates.

round up:

  • 4 eggs (this serves 2, btw)
  • 2 steaky cube-steaks
  • 4 small red potatoes
  • some fresh-ass rosemary
  • a little garlic
  • a nice shallot
  • some pats o’ butter

and do thusly:

  1. scrub those potatoes and stab them all around with a fork. stick those spuds in the microwave for about 5 minutes on high, or until appropriately hot, but not completely cooked through.
  2. remove from microwave, allow to cool a bit while you’re heating up a nice hot pan. cut up potatoes (leaving the skins on!) into bite-sized cubes.
  3. when skillet is hot, add butter and toast up yer rosemary and shallot. toss in the potatoes and fry them, turning after 5 minutes or so, until they are browned to your liking. add garlic towards the end so as not to burn it all to hell. feel free to keep tossing in more butter or olive oil as necessary to keep the pan nonsticky, as the potatoes like to suck up the fat.
  4. set potatoes aside, preferably under some type of cover to keep warm as you add more butter into the pan and fry up those steaks. about 2 minutes per side should do it, since your pan’s already borkingly hot. remove ’em from the heat and let sit on a cutting board for the remaining 5 minutes or so while you cook your eggs.
  5. add more butter to the pan and crack in your eggs. take ‘er (over) easy, and start plating up thusly: steaks on the bottom, eggs on top, potatoes on the side.
  6. serve that up to your bewildered guests, whose eyes will roll back in their heads with ecstasy.
