i hear you, bro: mark schatzker seeks the perfect steak and pretty much comes up empty handed

my high recommendation of mark schatzker’s book, steak, does have something to do with my own struggle to find steak that doesn’t suck, but moreover, awareness of the (ever-)increasing sad state of affairs that is known as, shudder, commodity food, and specifically, beef production.

beef product? hmmm, that sounds like it might be headed in the wrong direction.

this isn’t ultimately a new message, as we’ve been actively fucking up the way beef is raised, slaughtered, packaged and sold since world war 2 taught us how to manufacture large scale. (gee thanks, nazi swine.) a system so effective at scale and uniformity effectively robs the animal (and therefore, us) of any natural and essential nutritive value, speeding it along in the name of pocket fattening.

and don’t forget about the taste. when was the last time you thought to yourself: “my, but doesn’t this processed cheez slice taste better than this raw milk cheddar”? never, because you didn’t, because it doesn’t.

you get the point.

most steak doesn’t taste like steak anymore, and that fucking just won’t do.

so check this book out. it’s pretty essential, just like watching  food, inc.

one final question: what happens when all food, everywhere, sucks?

arm yourself, with ka-nowledge.
